The delicious-looking iced coffee the thing is on everyone’s Instagram is not produced from cooled leftover coffee. Ordinary brewing with hot water releases acids and essential oils that induce a bitter style. Cold-brewing, a straightforward manner of steeping floor coffee in room-temperature liquid, yields a concentrated syrup with a smooth, moderate taste (usually with less caffeine than hot). Make a batch of our meal beforehand, then stir with milk or liquid and add ice for picture-perfect refreshment.
To produce: Combine 12 ounces (1½ heaping cups) medium to coarsely ground coffee with 4 glasses room-temperature liquid in a cup container. Let sit at room-temperature for 12 hours. Strain through a mesh strainer lined with a coffee filter. (This base, about 2¾ glasses complete, could keep in the refrigerator for just two weeks.)
To provide: Combine a scant 1/2 cup the coffee base with equal parts water or milk. Pour over ice. Makes 6 portions.
